Koujiya's Fermented Rice Koji Powder is a fine powder made from rice Koji (rice inoculated with a fermentation culture, Aspergillus oryzae). Rich with natural enzymes, this ingredient is incredibly versatile enhancing the flavours of any dish. Additionally, Koji powder works great as a meat tenderizer; softening and enhancing umami flavours.
Koujiya have been operating their store on Shinji-dori street, Ise Jingu (Shrine), for more than 200 years, since 1816. Ise Shrine is the shinto shrine that the Japanese adore as "Soul of Japan" located in Ise city, Mie Prefecture.
